- 2 cups fortified coconut milk (original or unsweetened)
- 1/2 cup chia seeds (black or white)
- 1/2 cup Greek yogurt (vanilla or coconut flavor)
- 1/2 cup unsweetened shredded coconut (finely shredded)
- 1/4 cup honey
- 1 tsp vanilla extract
- 2 bananas (sliced, for topping)
- Extra shredded coconut (for topping)
Pour the coconut milk and honey into a small saucepan. Set it over medium heat and stir frequently until the mixture is steaming (about 5–10 minutes).
Remove the saucepan from heat and transfer the liquid to a glass mixing bowl.
Stir in the chia seeds, shredded coconut, and vanilla extract. Whisk the mixture well to ensure even distribution.
Let the mixture rest at room temperature for about 10 minutes to allow the chia seeds to begin absorbing the liquid.
Once cooled, cover the bowl with plastic wrap and refrigerate for at least 12 hours. This step is essential for the pudding to thicken properly.
After the 12-hour chill time, remove the bowl from the fridge and stir in the Greek yogurt until fully incorporated. For a smoother texture, you can blend the pudding in a high-quality blender.
Divide the pudding into small serving dishes and garnish with banana slices and shredded coconut on top.
