Ingredients
  

  • 2 cups fortified coconut milk (original or unsweetened)
  • 1/2 cup chia seeds (black or white)
  • 1/2 cup Greek yogurt (vanilla or coconut flavor)
  • 1/2 cup unsweetened shredded coconut (finely shredded)
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 2 bananas (sliced, for topping)
  • Extra shredded coconut (for topping)

Instructions
 

  • Pour the coconut milk and honey into a small saucepan. Set it over medium heat and stir frequently until the mixture is steaming (about 5–10 minutes).
  • Remove the saucepan from heat and transfer the liquid to a glass mixing bowl.
  • Stir in the chia seeds, shredded coconut, and vanilla extract. Whisk the mixture well to ensure even distribution.
  • Let the mixture rest at room temperature for about 10 minutes to allow the chia seeds to begin absorbing the liquid.
  • Once cooled, cover the bowl with plastic wrap and refrigerate for at least 12 hours. This step is essential for the pudding to thicken properly.
  • After the 12-hour chill time, remove the bowl from the fridge and stir in the Greek yogurt until fully incorporated. For a smoother texture, you can blend the pudding in a high-quality blender.
  • Divide the pudding into small serving dishes and garnish with banana slices and shredded coconut on top.
