- 8 oz dry pasta of choice (we used rigatoni)
- 1 Tablespoon olive oil
- 1 medium yellow onion, chopped
- 3 large garlic cloves, minced
- 1 lb ground turkey
- 1 24 oz jar marinara sauce (e.g., Rao’s)
- ½ cup whole milk cottage cheese
- Salt and pepper to taste
- Fresh basil, for serving
- Fresh parmesan, for serving
Cook pasta according to package instructions. Drain and set aside.
Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté for 5-6 minutes until softened and fragrant. Season with salt and pepper.
Stir in minced garlic and cook for 1-2 minutes until aromatic.
Add ground turkey to the skillet, stirring occasionally while breaking it apart with a spoon. Cook until browned and cooked through, about 6-8 minutes.
While the turkey cooks, combine marinara sauce and cottage cheese in a blender. Blend until the mixture is smooth and creamy.
Pour the creamy tomato sauce into the skillet with the cooked turkey. Mix well, then add the drained pasta. Toss everything together until evenly coated.
Scoop servings of pasta onto plates and finish with fresh basil and grated parmesan cheese.
