- 8 oz spaghetti or fettuccine
- 1 cup ripe tomatoes, diced
- 1 cup heavy cream
- 4 cloves garlic, minced
- 2 tbsp extra virgin olive oil
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Boil a large pot of salted water and cook the pasta until al dente, according to the package instructions. Drain and set aside.
Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté until golden and fragrant, around 1-2 minutes.
Stir in the diced tomatoes, and season with a pinch of salt and pepper. Allow to simmer for about 5 minutes, stirring occasionally, until the tomatoes break down slightly.
