Ingredients
  

  • 12 chicken tenders (1 1/4 lbs)
  • 2 large eggs beaten
  • 1 teaspoon kosher salt
  • Black pepper to taste
  • 1/2 cup seasoned breadcrumbs *
  • 1/2 cup seasoned panko *
  • Olive oil spray
  • Lemon wedges for serving

Instructions
 

  • Season the chicken tenders with kosher salt and freshly ground black pepper.
  • In a shallow bowl, beat the eggs until fully blended.
  • In another shallow bowl, combine the seasoned breadcrumbs and panko evenly.
  • Dip each chicken tender into the egg, let the excess drip off, then coat it in the breadcrumb mixture. Shake off excess crumbs and set the tenders aside on a large plate or cutting board.
  • Spray both sides of the breaded tenders generously with olive oil to ensure crisp edges.
  • Preheat your air fryer to 400°F (200°C) for 2-3 minutes.
  • Cook the tenders in batches, laying them in a single layer in the fryer basket. Air fry for 5 to 6 minutes on each side, flipping halfway, until golden brown and cooked through (internal temperature should reach 165°F).
  • Serve hot with lemon wedges on the side for a bright, tangy finish.

Notes

* For a gluten-free option, use gluten-free breadcrumbs and panko.
