Ingredients
  

  • Cooking spray Cooking spray
  • 1 lb lean ground beef
  • 4–6 green onions, thinly sliced, white and green parts separated
  • 4 cloves garlic, finely minced
  • 1 (12-ounce) bag cole slaw mix
  • 2 cups shredded carrots
  • 2 cups low-sodium chicken broth
  • cup low-sodium soy sauce
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon rice vinegar
  • 2 teaspoons pure honey
  • 2 teaspoons freshly grated ginger
  • 3 (3-ounce) packages ramen noodles (discard seasoning packets)
  • 1 cup shelled edamame, frozen
  • Optional garnishes: fresh cilantro, sliced green onions, Sriracha, sesame seeds, chili crisp, hot honey, or crushed red pepper flakes

Instructions
 

  • Preheat a medium skillet over medium-high heat and mist it with cooking spray. Add the ground beef, white parts of green onions, and minced garlic. Cook for 6-7 minutes until the beef is browned, stirring to break up any clumps.
  • Transfer the cooked beef mixture to your crockpot.
  • Add cole slaw mix, shredded carrots, chicken broth, soy sauce, sesame oil, vinegar, honey, and grated ginger to the slow cooker. Stir until evenly combined.
  • Cover and cook on the low setting for 4 hours (or high for 2 hours), allowing the vegetables to become tender and the broth to take on rich flavor.
  • About 30 minutes before serving, stir in the frozen edamame. Nestle the dry ramen noodles into the mixture, ensuring they are coated in the sauce and partially submerged.
  • Continue cooking on high for 15-30 minutes, stirring occasionally to help the noodles separate as they soften.
  • Once the noodles are tender, stir in the green onion tops and fresh cilantro.
  • Serve immediately with optional garnishes like Sriracha, hot honey, or sesame seeds for a personalized touch.
