  • 1/4 cup chopped green onions
  • 1/4 cup sliced water chestnuts, chopped
  • 3 tablespoons chopped sweet red pepper
  • 2 tablespoons reduced-fat mayonnaise
  • 2 teaspoons prepared mustard
  • 2 spinach tortillas (8 inches), room temperature
  • 1 cup shredded lettuce

Instructions

  • In a small bowl, combine the tuna, celery, green onions, water chestnuts, red pepper, mayonnaise, and mustard. Mix until everything is thoroughly blended and creamy.
  • Lay the spinach tortillas flat and evenly divide the tuna mixture onto each wrap.
  • Top with shredded lettuce for added crunch. Gently roll the tortillas tightly in a jelly-roll style.
  • Slice in half (if desired) and serve immediately. Enjoy!

Notes

Switch up the veggies: Try adding radishes, cucumbers, or sugar snap peas for extra crunch. Add herbs: Fresh dill, parsley, or basil can take the flavor to the next level. Spice it up: Mix in a dash of Sriracha or chili powder if you love heat. Make it a melt: Add sliced cheese, then grill in a skillet for a warm, gooey twist.
