Ingredients
  

  • 1 tbsp dried basil (or 3 tbsp fresh, chopped)
  • 1 tbsp dried oregano
  • 2 tbsp olive oil (choose high-quality extra virgin)
  • 1 tbsp balsamic vinegar (use aged balsamic for the best flavor)
  • Pinch of salt
  • Pinch of pepper
  • ½ large red onion (finely chopped)
  • cups cherry tomatoes (quartered)
  • 8 oz fresh mozzarella (halved or torn into small pieces)
  • 1 cucumber (peeled, scored, and diced into 1/2-inch pieces)

Instructions
 

  • In a small bowl, whisk together olive oil, balsamic vinegar, dried oregano, dried basil, salt, and pepper. Let the dressing sit for a few minutes to allow the flavors to marry.
  • Peel and score the cucumber by running a fork along the skin to create ridges. Dice it into 1/2-inch pieces and place in a mixing bowl.
  • Quarter cherry tomatoes and finely chop red onion. Add both to the bowl with the cucumber.
  • Halve fresh mozzarella balls or tear larger pieces into bite-sized portions. Add to the vegetable mixture and gently toss.
  • Pour the prepared dressing over the salad ingredients. Mix until everything is well-coated, then let the salad sit for 10 minutes to enhance the flavors.
