- 1 tbsp dried oregano
- 2 tbsp olive oil (choose high-quality extra virgin)
- 1 tbsp balsamic vinegar (use aged balsamic for the best flavor)
- Pinch of salt
- Pinch of pepper
- ½ large red onion (finely chopped)
- 1½ cups cherry tomatoes (quartered)
- 8 oz fresh mozzarella (halved or torn into small pieces)
- 1 cucumber (peeled, scored, and diced into 1/2-inch pieces)
In a small bowl, whisk together olive oil, balsamic vinegar, dried oregano, dried basil, salt, and pepper. Let the dressing sit for a few minutes to allow the flavors to marry.
