Ingredients
  

  • 2 bananas
  • 1/3 cup peanut butter (or creamy almond butter)
  • 2-3 heaping tablespoons honey (or maple syrup for vegan)
  • 2-3 tablespoons coconut milk (more if needed for blending)
  • 2-3 heaping tablespoons unsweetened cocoa powder
  • Dash of sea salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional)

Instructions
 

  • Add all ingredients—bananas, peanut butter, honey, coconut milk, cocoa powder, sea salt, vanilla extract, and cinnamon (if using)—into a blender.
  • Blend on high until fully smooth and creamy. If the mixture is too thick, add 1 tablespoon of coconut milk at a time until you reach your desired consistency.
  • Taste and adjust sweetness, adding more honey or maple syrup if desired.
  • Spoon the pudding into serving dishes and chill for 15-20 minutes for a firmer texture, or enjoy immediately for a softer, mousse-like consistency.
