- 1 cup almond flour (or almond meal)
- 5 tablespoons maple syrup (or any liquid sweetener you like)
Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper. Lightly oil the paper with coconut oil to prevent sticking.
In a large mixing bowl, combine the almond flour and maple syrup. Stir until the dough is wet, sticky, and well combined.
Oil your hands lightly. Scoop about 1 1/2 tablespoons of dough, roll it between your palms to create a ball, and place it on your prepared cookie sheet. Leave about a thumb's width of space between each ball to allow for spreading.
Repeat with the remaining dough, re-oiling your hands as needed.
Flatten each ball gently with your hand. For crispier cookies, press them thinner; for softer cookies, keep them slightly thicker.
Bake in the center of your oven for 10-12 minutes, or until the edges are just golden brown.
Remove the cookies from the oven and transfer them immediately to a cooling rack. Let them cool completely for at least 30 minutes to firm up before serving.
