These easy baked meatballs are a healthy twist on a classic recipe. Packed with protein and gluten-free, they're perfect for weeknight dinners, and can be customized to fit any dietary need.
Preheat your oven to 350°F. Line a baking sheet with parchment paper or lightly grease it with cooking spray for easy cleanup.
In a large mixing bowl, combine the ground beef, almond flour (or breadcrumbs), Italian seasoning, parsley, egg, onion powder, garlic powder, salt, and pepper.
Mix the ingredients gently using your hands or a spoon until they’re evenly combined. Avoid overmixing to keep the meatballs tender.
Shape the mixture into 16 equal-sized meatballs, rolling them gently in your hands. Place them on the prepared baking sheet.
Bake the meatballs in the preheated oven for 15–18 minutes, or until they’re cooked through and lightly browned. They should reach an internal temperature of 160°F.
Remove from the oven, serve, and enjoy! Pair them with marinara sauce, use them in a sub, or enjoy them with a side of roasted veggies.
Notes
If you don’t have almond flour, you can replace it with oats for a bit of extra fiber, or use Italian breadcrumbs if gluten isn’t a concern.
