Ingredients
  

  • 1 lb lean ground beef
  • ¼ cup Italian breadcrumbs, or ⅓ cup almond flour
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried parsley
  • 1 large egg
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1 teaspoon sea salt
  • ½ teaspoon pepper

Instructions
 

  • Preheat your oven to 350°F. Line a baking sheet with parchment paper or lightly grease it with cooking spray for easy cleanup.
  • In a large mixing bowl, combine the ground beef, almond flour (or breadcrumbs), Italian seasoning, parsley, egg, onion powder, garlic powder, salt, and pepper.
  • Mix the ingredients gently using your hands or a spoon until they’re evenly combined. Avoid overmixing to keep the meatballs tender.
  • Shape the mixture into 16 equal-sized meatballs, rolling them gently in your hands. Place them on the prepared baking sheet.
  • Bake the meatballs in the preheated oven for 15–18 minutes, or until they’re cooked through and lightly browned. They should reach an internal temperature of 160°F.
  • Remove from the oven, serve, and enjoy! Pair them with marinara sauce, use them in a sub, or enjoy them with a side of roasted veggies.

Notes

If you don’t have almond flour, you can replace it with oats for a bit of extra fiber, or use Italian breadcrumbs if gluten isn’t a concern.
