- 1 yellow onion, diced
- 3 garlic cloves, minced
- 1 tablespoon peeled and grated fresh ginger (optional)
- 4 cups chopped carrots (1 ¾ pounds or about 12 large carrots)
- 2 tablespoons olive oil
- 4 cups vegetable broth
- ¼ teaspoon dried dill
- ½ teaspoon kosher salt
- ¼ cup heavy cream (optional)
- Fresh parsley, for serving
- Croutons, for serving (optional)
Heat 2 tablespoons of olive oil in a large pot over medium-high heat.
Add diced yellow onion and sauté for 5 minutes until softened and fragrant.
Stir in minced garlic and, if using, grated ginger. Cook for 1 minute until aromatic.
Add chopped carrots, vegetable broth, dried dill, and kosher salt. Bring to a boil, then reduce heat to a simmer. Cook for 15-20 minutes, until carrots are tender and easily pierced with a fork.
Using a ladle, carefully transfer the hot soup to a blender. Add the heavy cream and blend until smooth and creamy. (You can also use an immersion blender directly in the pot.)
Taste and adjust seasonings as needed. Garnish with a drizzle of cream, fresh parsley, and optional croutons before serving.
