- 2 tablespoons unsweetened coconut milk or low-fat milk
- 1/4 teaspoon vanilla extract
- 1 1/2 tablespoons all-purpose flour
- 1 tablespoon sugar
- 1 tablespoon unsweetened cocoa powder
- 1/8 teaspoon salt
- 2 teaspoons mini chocolate chips (optional)
Place the coconut oil in a small microwave-safe mug. Microwave on high for 15 to 20 seconds until melted. Let it cool for 1 minute.
Whisk in the coconut milk (or milk) and vanilla extract until well combined.
Add the flour, sugar, cocoa powder, and salt. Whisk thoroughly until smooth and lump-free.
If desired, stir in mini chocolate chips for extra richness.
Microwave the mug on high for 30 to 40 seconds. The surface should feel firm but slightly springy, and it should no longer look glossy. Avoid overcooking as it can dry out the brownie.
