Instructions
Make the Strawberry Milk: Add the strawberry halves, non-dairy milk, yogurt, maple syrup, vanilla extract, lemon juice, and salt to a high-speed blender. Blend on high for 45-60 seconds until the mixture is smooth and creamy.
Combine Ingredients: In a large mixing bowl, stir together the oats and chia seeds. Pour the strawberry milk over the oats and mix well. Fold in the diced strawberries to distribute evenly.
Rest the Mixture: Allow the oat mixture to sit for 5 minutes so the chia seeds and oats can begin absorbing the liquid. Stir again to ensure an even consistency.
Refrigerate: Transfer the mixture into jars or containers with lids. Refrigerate for at least 4 hours, or ideally overnight, to let the flavors meld and the oats soften.
Serve: Top with nut butter, hemp hearts, or your favorite toppings. Enjoy cold straight from the fridge or gently warmed if preferred. Store any leftovers in the fridge for up to 5 days.
