Preheat your oven to 350 degrees and line a large baking sheet with aluminum foil.
In a large skillet, heat olive oil over medium heat. Add ground sausage and cook until no longer pink.
Stir in chopped onion and red pepper. Sauté until onions are translucent, about 5 minutes. Remove from heat and let cool.
Cut a hole in the top of each bread roll, removing the soft inside to form a hollow shell. Be careful not to puncture the bottom or sides.
Whisk together eggs, milk, green onions, salt, and pepper in a large bowl. Mix in 1 cup of grated cheddar cheese.
Fold the cooled sausage mixture into the egg mixture, combining evenly.
Place the hollowed-out bread rolls on your prepared baking sheet. Fill each roll with the egg and sausage mixture, leaving a little room at the top.
Bake for 25 minutes. Remove from the oven, top with remaining cheddar cheese, and bake for an additional 10 minutes.
If the bread browns too quickly, cover it with aluminum foil to prevent burning.
Garnish with additional green onions and serve warm with a fresh fruit salad.
