Ingredients
  

  • 2 cups mini or Persian cucumbers, chopped
  • 2 cups cherry tomatoes, quartered
  • 1/2 cup radishes, thinly sliced
  • 1 small head romaine lettuce, chopped
  • 1 cup parsley, chopped
  • 1/2 cup mint, chopped
  • 16 baked pita chips
  • 2 cloves garlic, minced
  • 3 tablespoons lemon juice
  • 1/2 tablespoon white balsamic or white wine vinegar
  • 1/4 cup olive oil
  • 1 teaspoon ground sumac
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper

Instructions
 

  • Prep your pita chips: Bake them following our linked recipe, or pan-fry for extra crispness. Let them cool completely to avoid sogginess in the salad.
  • Make the dressing: In a small bowl, whisk together minced garlic, lemon juice, vinegar, olive oil, sumac, sea salt, and pepper until fully emulsified.
  • Mix the veggies: In a large salad bowl, combine cucumbers, cherry tomatoes, radishes, romaine lettuce, parsley, and mint.
  • Add the dressing: Pour the prepared dressing over the vegetables and toss gently to coat every piece in the zesty flavors.
  • Incorporate the pita chips: Break half the pita chips into bite-sized pieces and toss them into the salad. Reserve the other half for garnish.
  • Serve immediately: Divide the salad into bowls, topping each serving with the remaining pita chips for extra crunch. Enjoy!

For gluten-free and keto-friendly options, use gluten-free pita chips or skip them altogether. Store leftovers by separating veggies, dressing, and pita chips to maintain freshness.
