Ingredients
  

  • 1 teaspoon olive oil
  • 1/2 cup grated zucchini, squeezed dry
  • 1/4 cup grated onion
  • 2 large eggs
  • 1 ounce feta cheese
  • Crushed red pepper flakes to taste

Instructions
 

  • Heat the olive oil in a small nonstick skillet over medium heat. Add the grated zucchini and onion.
  • Cook, stirring occasionally, until the vegetables are softened and golden, about 4-5 minutes.
  • Sprinkle the feta evenly over the cooked veggies. Allow the cheese to melt slightly for about 30 seconds.
  • Crack the eggs directly into the skillet, ensuring the yolks remain intact. Cover the skillet with a lid.
  • Lower the heat and cook until the egg whites are set but the yolks remain runny, or cook to your liking (about 3 minutes).
  • Carefully plate and garnish with crushed red pepper flakes to taste. Serve immediately and enjoy!
