- 1 teaspoon olive oil
- 1/2 cup grated zucchini, squeezed dry
- 1/4 cup grated onion
- 2 large eggs
- 1 ounce feta cheese
- Crushed red pepper flakes to taste
Heat the olive oil in a small nonstick skillet over medium heat. Add the grated zucchini and onion.
Cook, stirring occasionally, until the vegetables are softened and golden, about 4-5 minutes.
Sprinkle the feta evenly over the cooked veggies. Allow the cheese to melt slightly for about 30 seconds.
Crack the eggs directly into the skillet, ensuring the yolks remain intact. Cover the skillet with a lid.
Lower the heat and cook until the egg whites are set but the yolks remain runny, or cook to your liking (about 3 minutes).
