- 1/3 cup sweet chili sauce
- 2 tablespoons lime juice
- 1 tablespoon soy sauce
- 1 tablespoon Sriracha chili sauce
- 2 cloves garlic, minced
- 1/2 teaspoon grated lime zest
- 1/4 cup cornstarch
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1-1/2 pounds uncooked medium shrimp, peeled and deveined
- 3 tablespoons canola oil
- Hot cooked rice
- Sliced green onions and sesame seeds (optional)
In a small bowl, whisk together sweet chili sauce, lime juice, soy sauce, Sriracha, garlic, and lime zest. Set aside.
In a large bowl, combine cornstarch, salt, and pepper. Add shrimp and toss to coat evenly.
Heat oil in a large skillet over medium heat. Add shrimp in a single layer and cook for 2-3 minutes or until they turn pink. Remove from skillet and set aside.
In the same skillet, pour in the chili sauce mixture and bring to a boil, stirring constantly until slightly thickened.
Return the shrimp to the skillet, tossing to coat in the sauce. Cook for 1-2 more minutes.
Serve over hot cooked rice, garnished with green onions and sesame seeds if desired.
