Ingredients
  

  • ¼ cup butter
  • 1 pound leeks, chopped
  • 1 onion, chopped
  • 2 quarts water
  • 3 large potatoes, chopped
  • 2 large carrots, chopped
  • 1 bunch fresh asparagus, trimmed and cut into 1-inch pieces
  • cup uncooked long-grain white rice
  • 4 teaspoons salt
  • ½ pound fresh spinach
  • 1 cup heavy cream

Instructions
 

  • Melt the butter in a large pot over medium heat. Add the leeks and onion, stirring occasionally, until they are soft and fragrant, about 5-7 minutes.
  • Pour in the water and bring the mixture to a gentle simmer.
  • Add the chopped potatoes, carrots, asparagus, and rice to the pot. Stir in the salt and continue simmering for 30 minutes, or until the vegetables and rice are tender.
  • Gently stir in the spinach and heavy cream, allowing them to heat through for about 5 minutes.
  • Serve hot, garnished with fresh parsley or a drizzle of olive oil, if desired.
