- 1 cup dry farro
- 1 1/2 cups cannellini beans (15 oz can, drained and rinsed)
- 1/4 cup chopped sun-dried tomatoes
- 1 cup mini mozzarella balls
- 4 cups baby arugula
- Additional sea salt and pepper to taste
- 1 cup packed fresh basil (slightly chopped)
- 1/2 cup olive oil
- 3 tablespoons red wine vinegar
- 1/4 cup finely chopped shallot
- 1/2 teaspoon sea salt
- 3/8 teaspoon ground pepper
Cook farro according to package instructions. Once cooked, rinse it under cold water to cool and drain thoroughly.
In a blender or food processor, add the basil, olive oil, red wine vinegar, shallot, sea salt, and black pepper. Blend until the basil is finely chopped and the dressing is fully emulsified, about 1 minute.
In a large mixing bowl, combine the cooled farro, cannellini beans, chopped sun-dried tomatoes, mozzarella balls, and baby arugula.
Drizzle the basil vinaigrette over the salad and toss everything together until well coated. Season with additional salt and pepper if needed.
Serve immediately or refrigerate to serve chilled.
