  • 3/4 cup diced yellow or orange bell pepper
  • 3/4 cup diced seedless cucumber
  • 1/3 cup diced white onion
  • 1 to 2 jalapeño peppers, finely diced
  • 1/4 cup minced fresh cilantro
  • 2 tablespoons fresh-squeezed lime juice
  • 1 tablespoon white wine vinegar
  • 1 tablespoon agave syrup or honey
  • 1 clove garlic, minced
  • 1/2 teaspoon Chile lime seasoning (such as Trader Joe’s Chile Lime Seasoning Blend or Tajín ® Clasico)
  • 1/2 teaspoon kosher salt

Instructions

  • In a large bowl, add the diced strawberries, bell pepper, cucumber, white onion, jalapeño, and cilantro.
  • In a separate small bowl, whisk together the lime juice, white wine vinegar, agave syrup, minced garlic, Chile lime seasoning, and kosher salt until well combined.
  • Pour the lime dressing over the strawberry mixture and gently toss to coat everything evenly. Be careful not to overmix to keep the ingredients intact.
  • Serve immediately with tortilla chips, over grilled chicken, or as a vibrant topping for tacos.

Notes

If you’re making this salsa ahead of time, stir in the dressing just before serving to keep the flavors fresh and the texture crisp.
