This Frito pie combines bold Tex-Mex flavors with a quick and easy preparation. Perfect for busy weeknights, it layers crispy Frito chips, savory ground beef, and zesty enchilada sauce for a satisfying meal.

Ingredients
  

  • 1 pound ground beef
  • 1 medium onion chopped
  • 2 cans (15 ounces each) Ranch-Style beans (pinto beans in seasoned tomato sauce)
  • 1 package (9-1/4 ounces) Frito corn chips
  • 2 cans (10 ounces each) enchilada sauce
  • 2 cups shredded cheddar cheese
  • Thinly sliced green onions optional

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, cook the ground beef and chopped onion over medium heat for 6-8 minutes, stirring frequently, until the beef is browned and no longer pink, and the onion is tender. Drain the excess fat.
  • Add the ranch-style beans to the skillet and stir together. Heat through.
  • Set aside 1 cup of Frito corn chips for topping. Arrange the remaining chips evenly in the bottom of a greased 13x9-inch baking dish.
  • Layer the cooked meat and bean mixture evenly over the chips. Pour the enchilada sauce over the meat layer, and then sprinkle shredded cheddar cheese generously on top.
  • Finally, scatter the reserved chips on top for added crunch.
  • Bake the casserole uncovered for 15-20 minutes, or just until the cheese is fully melted and bubbling.
  • Optional: Garnish with thinly sliced green onions before serving for a fresh, zesty touch.
