- 1 pound ground beef
- 1 medium onion chopped
- 2 cans (15 ounces each) Ranch-Style beans (pinto beans in seasoned tomato sauce)
- 1 package (9-1/4 ounces) Frito corn chips
- 2 cans (10 ounces each) enchilada sauce
- 2 cups shredded cheddar cheese
- Thinly sliced green onions optional
Preheat your oven to 350°F (175°C).
In a large skillet, cook the ground beef and chopped onion over medium heat for 6-8 minutes, stirring frequently, until the beef is browned and no longer pink, and the onion is tender. Drain the excess fat.
Add the ranch-style beans to the skillet and stir together. Heat through.
Set aside 1 cup of Frito corn chips for topping. Arrange the remaining chips evenly in the bottom of a greased 13x9-inch baking dish.
Layer the cooked meat and bean mixture evenly over the chips. Pour the enchilada sauce over the meat layer, and then sprinkle shredded cheddar cheese generously on top.
Finally, scatter the reserved chips on top for added crunch.
Bake the casserole uncovered for 15-20 minutes, or just until the cheese is fully melted and bubbling.
Optional: Garnish with thinly sliced green onions before serving for a fresh, zesty touch.
