Frosty Summer Strawberry Watermelon Smoothie

This summer strawberry watermelon smoothie is a refreshing, healthy treat combining the sweetness of strawberries, the hydrating power of watermelon, and the creaminess of peaches for the perfect summertime drink.

Ingredients
  

  • 1/2 cup fresh or frozen watermelon flesh cubes
  • 1/2 cup frozen watermelon rind cubes *To freeze watermelon rind: Peel and cube it as described in the Notes section.
  • 1/2 cup fresh or frozen strawberries
  • 1/2 cup fresh or frozen peach slices
  • 1 small fresh or frozen banana
  • 2-3 fresh mint leaves
  • 3 tablespoons hemp seeds (or flax seeds, protein powder, nut butter, etc.)
  • 1 1/2 - 2 cups milk (dairy or nondairy) or coconut water

Instructions
 

  • Place all ingredients into the pitcher of a high-speed blender, starting with the liquids.
  • Turn the blender on low to combine lightly, then increase to high speed.
  • Blend for 30-60 seconds until smooth and creamy. If needed, use a tamper to press ingredients down for even blending.
  • Taste and adjust consistency with more liquid or sweetness if necessary.

Notes

*To freeze watermelon rind: Peel away the tough green skin, dice the white rind into cubes, and spread them on a lined sheet. Freeze until solid and store in an airtight container.
