Fruit Salad with Honey Dressing

Ingredients
  

  • 3 large limes, juiced (about 6 tablespoons)
  • 3 tablespoons honey
  • 1/2 teaspoon rosewater or orange blossom water (optional)
  • 2 cups thinly sliced fresh strawberries
  • 1 cup fresh cherries, pitted and halved
  • 1 cup blackberries
  • 1/2 cup raspberries
  • 1/4 cup pomegranate seeds (optional)
  • 1/3 cup roughly chopped walnuts, raw or toasted
  • 2 tablespoons roughly chopped fresh mint leaves

Instructions
 

  • In a small saucepan over medium heat, whisk together lime juice and honey until the honey fully dissolves and the mixture warms, about 2 minutes. Remove from heat and stir in rosewater, if desired. Let cool slightly.
  • In a large bowl, gently mix strawberries, cherries, blackberries, raspberries, and pomegranate seeds (if using).
  • Pour the cooled honey-lime dressing over the fruit and toss lightly to coat evenly.
  • Sprinkle in the walnuts and mint. Toss gently one more time and serve immediately or chill before serving.

Notes

For a vegan version, replace honey with agave nectar or maple syrup. Adjust the honey-to-lime ratio to taste for sweeter or more tart dressing.
