Ingredients
  

  • 20 oz boneless, skinless chicken breasts (1 ¼ lbs)
  • 2 tbsp all-purpose flour
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ½ tsp sweet paprika
  • ½ tsp salt
  • Freshly ground pepper to taste
  • 1 tbsp olive oil
  • 3 tbsp unsalted butter divided
  • 3 cloves garlic minced
  • 2 tbsp parsley freshly chopped

Instructions
 

  • Prep the chicken: Pat the chicken breasts dry with a paper towel and cut them into 1-inch pieces.
  • Season the chicken: In a bowl, sprinkle the flour, oregano, basil, paprika, salt, and pepper over the chicken. Toss to coat evenly.
  • Heat the pan: Warm a cast iron skillet over medium-high heat. Add the olive oil and 1 tablespoon of butter.
  • Cook the chicken: Once the butter is melted, arrange the chicken in a single layer. Cook undisturbed for 3 minutes until golden on one side. Flip and cook another 2 minutes.
  • Add garlic and parsley: Stir in the remaining butter, garlic, and parsley. Cook for an additional minute, allowing the flavors to meld and the chicken to reach full doneness.
  • Serve hot: Enjoy immediately as is, or pair with your favorite sides like rice, pasta, or a crisp green salad.
