Ingredients
  

  • 22 ounce porterhouse steak, 1 1/2 inches thick
  • Kosher salt and black pepper
  • 4 tablespoons salted butter
  • 3 sprigs fresh thyme
  • 1 sprig fresh rosemary
  • 1/2 small shallot, halved
  • 3 large cloves garlic, crushed with the back of a knife
  • 3 tablespoons vegetable oil

Instructions
 

  • Pat the porterhouse steak dry with paper towels, then season both sides generously with kosher salt and black pepper.
  • Allow the steak to rest at room temperature for 10 minutes. Meanwhile, prepare the aromatics (garlic, shallots, thyme, and rosemary).
  • Heat a cast iron skillet over high heat until very hot. Add vegetable oil, avoiding olive oil or butter as they can burn at high temperatures.
  • When the oil shimmers and appears webby, carefully lay the steak into the skillet. Sear for 4 minutes without moving to develop a golden-brown crust.
  • Flip the steak and cook for an additional 2 minutes. Using tongs, sear the steak edges for about 30 seconds each.
  • Reduce the heat slightly, then add butter, crushed garlic, shallot, and herbs to the skillet.
  • While tilting the pan, spoon the melted butter and aromatics over the steak repeatedly for 1 minute. Turn off the heat and continue basting for an additional 30 seconds.
  • Transfer the steak to a plate and pour the remaining butter mixture over it. Let rest for 10 minutes before slicing.
  • Serve immediately and enjoy!

Notes

To customize, substitute ghee or vegan butter for dairy-free options. For a plant-based version, use portobello mushrooms and follow the same basting technique.
