  • 1/2 tsp cumin seeds, crushed
  • Kosher salt and pepper
  • 2 lb broccoli crowns, cut into florets
  • 6 cloves garlic, peeled

  • Preheat your oven to 450°F and line two rimmed baking sheets with parchment paper for easy cleanup.
  • In a large mixing bowl, whisk together orange juice, olive oil, crushed cumin seeds, 3/4 teaspoon kosher salt, and 1/4 teaspoon black pepper. This will be your flavorful marinade.
  • Stir broccoli florets and peeled garlic cloves into the marinade, ensuring each piece is evenly coated.
  • Spread the broccoli and garlic in a single layer across the prepared baking sheets. Avoid overcrowding to promote even browning.
  • Roast for 14-17 minutes, rotating the sheets halfway through, until the broccoli is tender and charred in spots. The garlic should soften and become creamy within this time.
  • Once roasted, smash the garlic gently with a fork directly on the baking sheet. Combine everything onto one sheet and finish with a scatter of fresh orange zest for an aromatic lift. Toss well to mix before serving.
