Gingerbread Protein Balls

Ingredients
  

  • 1 1/2 cups rolled oats
  • 2 scoops vanilla protein powder (50-60 grams)
  • 1 cup cashew butter
  • 3 tablespoons maple syrup
  • 2 tablespoons molasses
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon sea salt
  • 1/2 cup white chocolate chips
  • 1/2 teaspoon coconut oil

Instructions
 

  • In a medium mixing bowl, combine oats, protein powder, cashew butter, maple syrup, molasses, vanilla, ginger, cinnamon, nutmeg, cloves, and sea salt. Stir until the mixture holds together; using your hands can make this step easier.
  • Roll the dough into small balls using a cookie scoop or your hands. Arrange them on a plate and chill in the freezer for a few minutes while preparing the chocolate drizzle, if using.
  • In a microwave-safe bowl, melt the white chocolate chips with the coconut oil in 30-second intervals, stirring after each interval until smooth. Alternatively, use a double boiler.
  • Drizzle the melted chocolate over the chilled gingerbread balls. Return them to the fridge or freezer for at least 30 minutes, allowing the chocolate to set completely.
