Ingredients
  

  • 4 (1 ½ pounds) boneless skinless chicken breasts, pounded to 1/4-inch thickness
  • 8 slices Provolone or Swiss cheese
  • 8 slices deli ham
  • 1 cup gum-free gluten free flour blend (recipe below)
  • 2 Egg wash: 2 eggs + 2 tablespoons milk, beaten
  • 1 ½ cups gluten-free Panko-style bread crumbs
  • Cooking oil spray
  • 2 tablespoons unsalted butter
  • 3 tablespoons gum-free gluten free flour blend (or superfine sweet white rice flour)
  • ½ cup chicken stock
  • 3 sprigs fresh thyme (or 1/2 teaspoon dried)
  • 1 cup milk
  • ½ teaspoon kosher salt
  • teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon Dijon mustard
  • ¼ cup finely grated Parmigiano-Reggiano cheese (optional)

Instructions
 

  • Preheat your oven to 375°F. Line a large rimmed baking sheet with parchment paper and set it aside.
  • Lay out the chicken breasts. Place one slice of cheese, two slices of ham, and another slice of cheese on top of each breast. Roll tightly and secure with toothpicks.
  • Set up three shallow bowls: one with the flour blend, one with egg wash, and one with bread crumbs. Dredge each chicken roll in flour, then dip in egg wash, and coat in Panko crumbs. Ensure the crumbs are pressed firmly for a crispy coating.
  • Place chicken seam-side down on the baking sheet. Spray lightly with cooking oil and cover loosely with foil. Bake for 25 minutes.
  • Remove foil, continue baking for 5 minutes, or until the chicken reaches an internal temperature of 165°F and the breadcrumbs are golden.
  • Meanwhile, prepare the sauce. Melt butter in a saucepan over medium heat, then whisk in the gluten free flour blend. Cook for 1 minute. Add chicken stock and thyme, whisk until thickened. Stir in milk, seasonings, and mustard. Simmer for 2-3 minutes until creamy. Remove from heat and stir in cheese (if using).
  • To serve, remove toothpicks, slice chicken crosswise, and drizzle with the sauce. Enjoy!
