Ingredients

  • 1.5 cups raw almonds, roughly chopped
  • 1 cup raw pecans, roughly chopped
  • 1 cup unsweetened coconut flakes
  • 1/2 cup Garden of Life Organic Ground Flaxseed
  • 1/2 teaspoon cinnamon
  • 1 medium banana, mashed
  • 1/4 cup Garden of Life Organic Extra Virgin Coconut Oil, melted and cooled
  • 2 tablespoons hot water
  • 1/3 cup dark chocolate chips

Instructions

  • Preheat the oven to 350°F and line a large baking sheet with parchment paper.
  • In a large mixing bowl, combine the almonds, pecans, coconut flakes, flaxseed, and cinnamon. Toss until evenly mixed.
  • In a small bowl, mash the banana and mix it with the melted coconut oil and hot water.
  • Pour the banana mixture over the nuts and stir well to coat everything evenly.
  • Transfer the mixture to the prepared baking sheet and press it down firmly into a large, compact rectangle to encourage clusters.
  • Bake for 15 minutes. Rotate the pan and bake for another 15 minutes until the edges are golden-brown and fragrant.
  • Remove from the oven and let it cool for about 10 minutes. Sprinkle the chocolate chips over the granola while it’s still slightly warm but not hot.
  • Once completely cooled, break the granola into large clusters. Enjoy immediately or store for later.
