- 1.5 cups raw almonds roughly chopped
- 1 cup raw pecans roughly chopped
- 1 cup unsweetened coconut flakes
- 1/2 cup Garden of Life Organic Ground Flaxseed
- 1/2 teaspoon cinnamon
- 1 medium banana mashed
- 1/4 cup Garden of Life Organic Extra Virgin Coconut Oil melted and cooled
- 2 tablespoons hot water
- 1/3 cup dark chocolate chips
Preheat your oven to 350°F. Line a large baking sheet with parchment paper to ensure easy cleanup and prevent sticking.
In a large mixing bowl, combine the almonds, pecans, coconut flakes, flaxseed, and cinnamon. Toss until evenly distributed.
In a smaller bowl, mash the banana thoroughly and mix it with melted coconut oil and hot water. Stir until smooth.
Pour the wet mixture over the dry ingredients. Use a spatula to mix until every piece is evenly coated.
Spread the mixture onto the prepared baking sheet, pressing it down firmly into a single layer. This step is crucial for creating clusters.
Bake in the preheated oven for 15 minutes. Rotate the pan for even cooking, then bake for an additional 15 minutes until golden and fragrant.
Remove the sheet from the oven and allow the granola to cool completely. Toss the dark chocolate chips on top while it’s still slightly warm.
Break the cooled granola into clusters and enjoy immediately or store for later.
