Ingredients

  • 1.5 cups raw almonds roughly chopped
  • 1 cup raw pecans roughly chopped
  • 1 cup unsweetened coconut flakes
  • 1/2 cup Garden of Life Organic Ground Flaxseed
  • 1/2 teaspoon cinnamon
  • 1 medium banana mashed
  • 1/4 cup Garden of Life Organic Extra Virgin Coconut Oil melted and cooled
  • 2 tablespoons hot water
  • 1/3 cup dark chocolate chips

Instructions

  • Preheat your oven to 350°F. Line a large baking sheet with parchment paper to ensure easy cleanup and prevent sticking.
  • In a large mixing bowl, combine the almonds, pecans, coconut flakes, flaxseed, and cinnamon. Toss until evenly distributed.
  • In a smaller bowl, mash the banana thoroughly and mix it with melted coconut oil and hot water. Stir until smooth.
  • Pour the wet mixture over the dry ingredients. Use a spatula to mix until every piece is evenly coated.
  • Spread the mixture onto the prepared baking sheet, pressing it down firmly into a single layer. This step is crucial for creating clusters.
  • Bake in the preheated oven for 15 minutes. Rotate the pan for even cooking, then bake for an additional 15 minutes until golden and fragrant.
  • Remove the sheet from the oven and allow the granola to cool completely. Toss the dark chocolate chips on top while it’s still slightly warm.
  • Break the cooled granola into clusters and enjoy immediately or store for later.
