- 350g / 3 cups shredded cooked chicken
- 250g / 8oz thin flat rice noodles rinsed under cold water
- 4 cups green onions cut into 1.25cm pieces
- 1/4 cup roughly chopped ginger
- 2 cloves garlic chopped
- 2 tbsp rice vinegar
- 2 tbsp water
- 2 tbsp light soy sauce
- 1 tsp kosher salt
- 1/4 tsp white pepper
- 1/3 cup grapeseed oil
- Sriracha to taste
- 1/4 cup crispy shallots
Make the ginger-scallion sauce: In a tall jug, add 1/4 of the green onions, ginger, garlic, vinegar, and water. Use a stick blender to puree until smooth (about 15 seconds).
Add in the soy sauce and remaining green onions. Blend again until it reaches a textured, pesto-like consistency—avoid over-blending.
Stir in the oil, salt, and white pepper. Let the sauce rest for 10 minutes to allow the flavors to combine.
Prepare the noodles: Rinse the cooked rice noodles under cold water. Set aside.
Toss the noodles with the ginger-scallion sauce until fully coated. Then add the shredded chicken and mix again evenly.
Serve: Divide into bowls and garnish with crispy shallots and a drizzle of sriracha. Serve cold or at room temperature. Enjoy!
