Green Goddess Salad

Ingredients
  

  • 4 cups green cabbage finely chopped
  • 3 cups curly green kale finely chopped
  • 1 cup mini cucumbers diced
  • 1 bunch green onions finely chopped
  • 1 tablespoon dried chives
  • 1/2 cup chickpeas
  • 1 cup fresh basil
  • 1 cup baby spinach
  • 2 cloves garlic
  • 1 small shallot
  • 2 tablespoons fresh dill
  • 6 tablespoons lemon juice
  • 1/4 cup olive oil
  • 1/4 cup walnuts or cashews
  • 1/3 cup nutritional yeast
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon salt

Instructions
 

  • Finely chop the green cabbage, kale, cucumbers, and green onions. Make sure everything is evenly chopped so it mixes well and creates a uniform texture. Don’t forget to remove the kale stems!
  • In a large mixing bowl, combine the cabbage, kale, cucumbers, green onions, dried chives, and chickpeas. Toss everything together evenly and set aside.
  • In a blender, combine the basil, spinach, garlic, shallot, dill, lemon juice, olive oil, walnuts (or cashews), nutritional yeast, apple cider vinegar, and salt. Blend until the dressing is smooth and creamy. If needed, add a bit of water to adjust the consistency.
  • Pour the dressing over the salad mixture and toss thoroughly to ensure every bite is coated. Taste and adjust seasoning as necessary.
  • Serve immediately, or refrigerate for 10–15 minutes to allow the flavors to meld. Enjoy on its own, with your favorite protein, or as a dip with tortilla chips.
