Grilled Chicken Kebabs

These grilled chicken kebabs are a healthy, protein-packed dinner bursting with Middle Eastern flavors. Perfect for grilling or air frying, this easy recipe is versatile and delicious!

Ingredients
  

  • 2 ½ pounds boneless, skinless chicken breasts cut into 1 1/2-inch pieces
  • 1 cup Greek yogurt *
  • 8 cloves garlic minced
  • ¼ cup olive oil
  • 2 teaspoons paprika
  • 1 teaspoon cumin
  • ½ teaspoon crushed red pepper flakes
  • 1 lemon zested and juiced
  • 2 red onions roughly chopped

Instructions
 

  • Prepare the chicken by cutting it into 1 1/2-inch cubes and placing them into a large bowl.
  • In the same bowl, add Greek yogurt, olive oil, minced garlic, paprika, cumin, crushed red pepper flakes, lemon juice, and lemon zest. Mix until the chicken is fully coated in the marinade.
  • Cover and let the chicken marinate for at least 30 minutes (or up to overnight for deeper flavor).
  • While the chicken marinates, soak wooden skewers in water for 30 minutes to prevent burning on the grill.
  • Thread the marinated chicken and onion pieces alternately onto the soaked skewers, making about 8 kebabs.
  • Preheat your grill to 450°F. Once heated, grill the skewers for 6-7 minutes per side, or until the chicken is cooked through and slightly charred.
  • Remove from grill and serve hot. Enjoy!
  • Air Fryer Method: Line your air fryer basket with parchment paper, arrange kebabs, and air fry at 400°F for 10 minutes. Flip them and cook for another 8-9 minutes until golden brown and cooked through.

Notes

*For a dairy-free option, replace Greek yogurt with Toum (Middle Eastern garlic spread).
