Grilled Salmon with Plum Sauce

- 5 medium plums divided
- 1/2 cup water
- 2 tablespoons ketchup
- 1 chipotle pepper in adobo sauce finely chopped
- 1 tablespoon sugar
- 1 tablespoon olive oil
- 6 salmon fillets 6 ounces each
- 3/4 teaspoon salt
Coarsely chop 2 plums and add them to a small saucepan with 1/2 cup water.
Bring the mixture to a boil, then reduce heat. Simmer uncovered for 10-15 minutes, or until the plums soften and most of the liquid evaporates.
Allow the mixture to cool slightly before transferring it to a food processor. Add ketchup, chipotle pepper, sugar, and olive oil. Blend until smooth.
Reserve 3/4 cup of sauce for serving and set aside the remaining sauce for basting.
Sprinkle the salmon fillets with 3/4 teaspoon of salt. Place them skin-side up on a greased grill rack.
Grill covered, over medium heat for about 10 minutes, brushing the salmon with the remaining sauce during the last 3 minutes of cooking.
Slice the remaining plums and serve alongside the grilled salmon with the reserved plum sauce.
