Grilled Salmon with Plum Sauce

This grilled salmon with plum sauce combines tender, smoky grilled salmon and a spicy, sweet plum sauce for a dish bursting with flavor. Perfect for healthy dinners or summer grilling!

Ingredients
  

  • 5 medium plums divided
  • 1/2 cup water
  • 2 tablespoons ketchup
  • 1 chipotle pepper in adobo sauce finely chopped
  • 1 tablespoon sugar
  • 1 tablespoon olive oil
  • 6 salmon fillets 6 ounces each
  • 3/4 teaspoon salt

Instructions
 

  • Coarsely chop 2 plums and add them to a small saucepan with 1/2 cup water.
  • Bring the mixture to a boil, then reduce heat. Simmer uncovered for 10-15 minutes, or until the plums soften and most of the liquid evaporates.
  • Allow the mixture to cool slightly before transferring it to a food processor. Add ketchup, chipotle pepper, sugar, and olive oil. Blend until smooth.
  • Reserve 3/4 cup of sauce for serving and set aside the remaining sauce for basting.
  • Sprinkle the salmon fillets with 3/4 teaspoon of salt. Place them skin-side up on a greased grill rack.
  • Grill covered, over medium heat for about 10 minutes, brushing the salmon with the remaining sauce during the last 3 minutes of cooking.
  • Slice the remaining plums and serve alongside the grilled salmon with the reserved plum sauce.
