Ingredients
  

  • Peels from 3 organic oranges
  • 1/4 cup coconut sugar
  • 1/4 cup honey
  • 1/2 cup filtered water plus more for blanching
  • 1/4 cup coconut oil
  • 1/4 cup honey
  • 1/4 cup cocoa powder
  • 1/4 teaspoon vanilla extract

Instructions
 

  • Slice orange peels into thin strips. Aim for uniform thickness for even cooking.
  • Blanch the orange peels: Place the strips in a medium pot and cover with filtered water. Bring to a boil, then remove from heat and drain. Repeat one more time to reduce bitterness.
  • In a medium pot, combine coconut sugar, honey, and 1/2 cup filtered water. Bring this mixture to a boil over high heat, stirring constantly.
  • Reduce heat to simmer. Add the blanched orange peels to the syrup and simmer uncovered for about 1 hour, stirring frequently to avoid burning. The peels should become translucent.
  • Carefully remove the candied peels from the pot and spread them evenly on a sheet of parchment paper to dry. Allow to cool completely.
  • Optional chocolate dip: Melt coconut oil in a small saucepan. Whisk in honey, cocoa powder, and vanilla extract until smooth. Dip the candied orange peels in the chocolate and let them dry until hardened.
