Ingredients
  

  • 1-1/2 cups mashed ripe bananas (4-5 medium)
  • 1-1/2 cups chopped peeled apples (2 medium)
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 2 tablespoons water
  • 2 tablespoons melted butter
  • 1-1/2 cups all-purpose flour (or gluten-free flour blend)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup sweetened shredded coconut
  • 1/2 cup caramel sundae syrup
  • 1/4 teaspoon sea salt

Instructions
 

  • Preheat your oven to 350°F and grease a 9x5-inch loaf pan. Dust it lightly with flour.
  • In a large mixing bowl, combine the mashed bananas, chopped apples, sugar, brown sugar, and water. Stir in the melted butter until the mixture is well blended.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture until combined. Avoid overmixing.
  • Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  • Meanwhile, toast the shredded coconut in a shallow pan at 350°F for 4-6 minutes, stirring occasionally until golden brown. Let it cool slightly.
  • Mix the toasted coconut with the caramel syrup and sea salt. Spread this topping over the cooled loaf before slicing and serving.
