- 1-1/2 cups mashed ripe bananas (4-5 medium)
- 1-1/2 cups chopped peeled apples (2 medium)
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 2 tablespoons water
- 2 tablespoons melted butter
- 1-1/2 cups all-purpose flour (or gluten-free flour blend)
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup sweetened shredded coconut
- 1/2 cup caramel sundae syrup
- 1/4 teaspoon sea salt
Preheat your oven to 350°F and grease a 9x5-inch loaf pan. Dust it lightly with flour.
In a large mixing bowl, combine the mashed bananas, chopped apples, sugar, brown sugar, and water. Stir in the melted butter until the mixture is well blended.
In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture until combined. Avoid overmixing.
Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Meanwhile, toast the shredded coconut in a shallow pan at 350°F for 4-6 minutes, stirring occasionally until golden brown. Let it cool slightly.
Mix the toasted coconut with the caramel syrup and sea salt. Spread this topping over the cooled loaf before slicing and serving.
