Ingredients
  

  • 1 tbsp olive oil
  • 0.5 cup red onion, diced
  • 3 cloves garlic, minced
  • 1 lb ground chicken
  • 1 tbsp dried oregano
  • 1 tsp dried dill
  • 0.5 tsp salt, plus more to taste
  • 0.25 tsp black pepper
  • 1 tbsp fresh lemon juice
  • 4 cups cauliflower rice, cooked (or regular rice)
  • 1 English cucumber, diced
  • 0.5 cup Kalamata olives, pitted and sliced
  • 0.25 cup red onion, finely diced, for topping
  • 0.25 cup fresh dill, chopped
  • 1 cup tzatziki sauce (store-bought or homemade, dairy-free if needed)

Instructions
 

  • Prep the Tzatziki and Veggies: If making homemade tzatziki, combine Greek yogurt (or a dairy-free option), grated and squeezed cucumber, minced garlic, lemon juice, dill, and a pinch of salt. Stir well and let it chill in the fridge. Dice cucumbers and red onion, slice the Kalamata olives, and chop fresh dill for garnish.
  • Cook the Base: If choosing cauliflower rice, sauté it in olive oil over medium heat for about 5–7 minutes until tender. Season lightly with salt before removing from the pan.
  • Prepare the Greek Chicken: Heat olive oil in a skillet over medium-high heat. Cook the diced red onion for 3–4 minutes until softened, add garlic for 30 seconds, and then add ground chicken. Cook until browned, breaking it into crumbles as it cooks. Stir in oregano, dill, salt, and pepper. Squeeze in lemon juice just before removing from heat for extra brightness.
  • Assemble the Bowls: Start with a portion of cauliflower rice, top with seasoned ground chicken, and layer with cucumbers, olives, red onion, and fresh herbs. Add a generous dollop of tzatziki sauce and serve with lemon wedges if desired.
