Chop scallions, separating white and green parts. Mince the garlic.
Add the white parts of the scallions, garlic, and ginger to the pan. Cook for about 2 minutes, until fragrant.
Add the ground turkey, breaking it up with a wooden spoon. Cook for 5 minutes until starting to brown.
Add shredded carrots, snow peas, broccoli, and water. Cover the pan and steam the vegetables for 10 minutes, stirring occasionally.
Remove the lid, allowing the remaining water to evaporate. Continue cooking for 3-5 minutes until vegetables are tender and turkey is fully cooked.
In a small bowl, whisk together teriyaki sauce, honey, rice wine vinegar, and sriracha.
Pour the sauce into the pan, stirring to coat the turkey and vegetables evenly. Add green parts of the scallions and adjust seasoning as needed.
Serve immediately, garnished with extra scallions if desired.
