Ingredients
  

  • 2 lbs ground turkey breast, 99% fat free
  • 1 bunch scallions (divided)
  • 4 cloves garlic, minced
  • 1 tsp ginger (paste or freshly grated)
  • 10 oz shredded carrots
  • 9 oz snow peas
  • 12 oz broccoli florets
  • 1/2 cup water
  • 2/3 cup teriyaki marinade and sauce (Kikkoman brand)
  • 2 tbsp honey
  • 2 tbsp rice wine vinegar
  • 1 tsp sriracha (adjust for heat preferences)
  • Cooking spray

Instructions
 

  • Heat a large frying pan over medium-high, coating it with cooking spray.
  • Chop scallions, separating white and green parts. Mince the garlic.
  • Add the white parts of the scallions, garlic, and ginger to the pan. Cook for about 2 minutes, until fragrant.
  • Add the ground turkey, breaking it up with a wooden spoon. Cook for 5 minutes until starting to brown.
  • Add shredded carrots, snow peas, broccoli, and water. Cover the pan and steam the vegetables for 10 minutes, stirring occasionally.
  • Remove the lid, allowing the remaining water to evaporate. Continue cooking for 3-5 minutes until vegetables are tender and turkey is fully cooked.
  • In a small bowl, whisk together teriyaki sauce, honey, rice wine vinegar, and sriracha.
  • Pour the sauce into the pan, stirring to coat the turkey and vegetables evenly. Add green parts of the scallions and adjust seasoning as needed.
  • Serve immediately, garnished with extra scallions if desired.
