Healthy Blueberry Cobbler

Ingredients
  

  • 4 cups fresh blueberries
  • 1 tsp cornstarch
  • 1 tsp lemon juice
  • Cooking spray
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/8 tsp nutmeg
  • Dash of salt
  • 1 tbsp vegetable oil
  • 1/2 tsp vanilla extract
  • 2 egg whites
  • 1 tsp cinnamon for topping
  • 2 tsp sugar for topping

Instructions
 

  • Preheat your oven to 350°F.
  • In a mixing bowl, toss the blueberries with cornstarch and lemon juice until evenly coated.
  • Spray a 9-inch round baking dish or pie plate with cooking spray. Pour the blueberry mixture into the prepared dish, spreading it evenly.
  • In a separate bowl, whisk together the flour, sugar, baking powder, nutmeg, and salt.
  • Create a small well in the center of the dry ingredients. In a separate smaller bowl, mix the vegetable oil, vanilla, and egg whites, and pour them into the well.
  • Stir the mixture just until it comes together—don’t overmix! Drop small spoonfuls of the batter over the blueberries to cover evenly.
  • In a small bowl, combine 1 tsp cinnamon and 2 tsp sugar. Sprinkle this cinnamon sugar mixture over the top of the batter.
  • Place the dish in the oven and bake for 40-45 minutes, or until the top is golden brown and the blueberry mixture is bubbling around the edges.
  • Remove the cobbler from the oven and let it cool slightly before serving. Enjoy warm, ideally with a dollop of Greek yogurt or a scoop of dairy-free vanilla ice cream.

Notes

Use fresh blueberries for best results, and avoid frozen ones to prevent a runny texture. Leftovers can be stored in the fridge for up to 3 days.
