Healthy Blueberry Crumble Bars

These healthy blueberry crumble bars combine a juicy blueberry filling with a hearty oat-based crumble for a delicious, gluten-free, and fiber-packed snack or dessert that's easy to make!

Ingredients
  

  • 1 cup oat flour
  • 1 1/2 cups old fashioned rolled oats
  • 1/2 cup coconut sugar
  • 1/2 teaspoon sea salt
  • 6 Tablespoons coconut oil room temperature/solid
  • 2 Tablespoons hemp hearts
  • 2 cups blueberries fresh or frozen
  • Zest of one lemon
  • 2 Tablespoons water
  • 1 Tablespoon arrowroot powder or cornstarch

Instructions
 

  • Preheat your oven to 350°F. Line an 8×8-inch baking dish with parchment paper or spray with cooking spray.
  • In a small saucepan, combine the blueberries, lemon zest, water, and arrowroot powder. Cook over medium-high heat until the mixture begins to boil.
  • Reduce to a simmer, stirring constantly for 3-5 minutes, until the blueberry filling thickens and some berries burst. It should coat the back of a spoon without being overly runny. Set aside to cool slightly.
  • In a mixing bowl, whisk together the oat flour, rolled oats, coconut sugar, and sea salt.
  • Add the coconut oil and mix until the ingredients form a crumbly texture. Reserve ⅔ cup of this mixture for the topping and stir hemp hearts into this portion.
  • Press the remaining crumble mixture firmly into the prepared baking dish to create the crust.
  • Spread the blueberry filling evenly over the crust, then sprinkle the reserved crumble mixture on top.
  • Bake for 35-40 minutes, until the topping is golden brown and the blueberry filling bubbles around the edges.
  • Transfer the dish to a wire rack and let it cool completely before cutting into 12 bars.

Notes

Cool completely before slicing to ensure the bars maintain their shape. For variety, try substituting other fruits like raspberries or blackberries!
