Ingredients
  

  • 1 cup sliced carrots
  • ½ teaspoon finely shredded orange peel
  • 1 cup orange juice (freshly squeezed or store-bought, no added sugar)
  • 1 ½ cups ice cubes
  • 3 orange slices (optional, for garnish)

Instructions
 

  • In a small saucepan, bring a small amount of water to a boil and add the sliced carrots. Cover and cook for about 15 minutes or until the carrots are tender. Drain the water and allow the carrots to cool completely.
  • Place the cooled carrots in a blender. Add the shredded orange peel and orange juice. Cover and blend until the mixture is smooth and creamy.
  • Add the ice cubes to the blender. Cover and blend until the texture is frosty and even. If needed, scrape down the sides to ensure a uniform blend.
  • Pour the smoothie into glasses and, if desired, garnish with a slice of orange. Serve immediately and enjoy!

Notes

Make sure to allow the cooked carrots to cool completely before blending to keep your smoothie cold. Using a high-speed blender ensures a smoother texture, and don’t skip the finely shredded orange peel for an added citrus zing.
