Gently fold in the grated carrots, chopped walnuts, raisins, and chocolate chips, if using. Be careful not to overmix, as you want the batter to stay light.
Pour the batter into the prepared baking dish, smoothing out the top with a spatula for an even layer.
Bake for 25 minutes or until a toothpick inserted into the center comes out clean. Cool the dish completely on a wire rack before applying frosting.
Once cooled, spread the cream cheese frosting evenly over the bars and garnish with additional chopped walnuts if desired.
