Healthy Carrot Muffins

Ingredients
  

  • 1 ½ cups diced apples, skin on (1 medium apple)
  • 2 large eggs
  • 2 cups Old Fashioned rolled oats plus more for topping
  • ¼ cup olive oil
  • ½ cup pure maple syrup (see Notes)
  • 1 teaspoon each baking soda, baking powder, and vanilla
  • 1 ½ teaspoons cinnamon
  • ½ teaspoon ginger
  • ¼ teaspoon nutmeg
  • ¼ teaspoon kosher salt
  • 2 cups shredded carrots (large grate)
  • ½ cup raisins

Instructions
 

  • Preheat your oven to 350°F and line a muffin tin with 10-12 muffin cups.
  • To a blender, add the diced apples, eggs, rolled oats, olive oil, maple syrup, baking soda, baking powder, vanilla, cinnamon, ginger, nutmeg, and kosher salt.
  • Blend on high for 1-2 minutes until smooth and creamy.
  • Let the batter sit for 5 minutes. During this time, grate your carrots if you haven't already.
  • Fold in the shredded carrots and raisins gently using a spatula.
  • Divide the batter evenly among the muffin cups, filling each nearly to the top for taller muffins.
  • Sprinkle a few additional oats on top for texture, if desired.
  • Bake for 28-30 minutes, or until a toothpick inserted in the center comes out clean.
  • Remove the muffins from the tin and let them cool on a wire rack for 5-10 minutes before serving.
