This healthy chicken chili is a guilt-free chicken chili recipe that’s hearty, full of bold flavors, and high in protein. Perfect for an easy chicken chili dinner or meal prep!
Heat a large Dutch oven over medium heat. Add the ground chicken, onion, red pepper, and garlic. Cook for 6-8 minutes, stirring frequently, until the chicken is no longer pink and the vegetables are tender. Break up the chicken into crumbles as it cooks. Drain any excess fat.
Stir in the pinto beans, diced tomatoes with their juices, water, tomato paste, baking cocoa, chili powder, cumin, ground black pepper, and salt.
Bring the mixture to a boil, then reduce the heat to low. Simmer uncovered for 15-20 minutes, stirring occasionally, until the flavors meld together.
While the chili simmers, prepare the brown rice according to package instructions.
