- 1/4 cup lemon juice
- 2 tablespoons olive oil
- 3/4 teaspoon minced garlic divided
- 1/2 teaspoon ground mustard
- 1/2 teaspoon dried oregano
- 1/2 pound boneless skinless chicken breasts cut into 1/2-inch strips
- 1/2 cup chopped peeled cucumber
- 1/3 cup plain yogurt
- 1/4 teaspoon dill weed
- 2 whole pita breads
- 1/2 small red onion thinly sliced
Prep the marinade: In a large resealable plastic bag, combine the lemon juice, olive oil, 1/2 teaspoon minced garlic, ground mustard, and dried oregano. Add the chicken strips, seal the bag, and turn it until the chicken is fully coated. Let it refrigerate for at least 1 hour to absorb the flavors.
Make the tzatziki sauce: In a small bowl, mix the chopped cucumber, plain yogurt, dill, and the remaining 1/4 teaspoon of garlic. Cover and refrigerate until serving.
Cook the chicken: Heat a large nonstick skillet over medium heat. Remove the chicken from the marinade, discard the excess liquid, and cook the chicken for 7-8 minutes, stirring occasionally, until it's golden-brown and no longer pink inside.
Assemble: Warm the pita breads, then spoon the cooked chicken onto each. Top with a generous dollop of the creamy tzatziki and sprinkle with thinly sliced onions. Fold in half and serve immediately.
