Ingredients

  • 1/2 cup dry bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 3 garlic cloves, minced
  • 1 tablespoon minced fresh basil or 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1 pound lean ground chicken
  • 1 cup meatless spaghetti sauce, divided
  • 2 slices part-skim mozzarella cheese, cut in half
  • 4 slices Italian bread (3/4 inch thick)

Instructions

  • In a large bowl, mix the bread crumbs, Parmesan cheese, garlic, basil, and oregano.
  • Add the ground chicken and gently combine until evenly mixed. Avoid overmixing to keep the patties tender.
  • Shape the mixture into four 1/2-inch-thick oval patties.
  • Preheat your grill to medium heat or set your broiler to high. Cook the patties for 4-7 minutes per side or until an internal thermometer reads 165°F.
  • Spoon 1/2 cup of spaghetti sauce over the cooked patties, then top each with a half slice of mozzarella cheese.
  • Cover the grill or broil the patties for 30-60 seconds to melt the cheese until it’s bubbling and golden.
  • Meanwhile, lightly toast the bread slices on the grill for 30-60 seconds per side or under the broiler until they’re golden and crisp.
  • Arrange each patty on a slice of toasted bread and top with the remaining spaghetti sauce. Serve immediately.
