Healthy Fig Bread

Ingredients
  

  • ½ cup mashed figs plus 1-2 more for topping
  • 2 eggs
  • ¼ cup unsweetened applesauce or oil
  • ¼ cup plain full-fat Greek yogurt
  • ½ cup coconut sugar
  • 1 teaspoon vanilla
  • 1 ½ cups whole wheat pastry flour or white whole wheat flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • ½ teaspoon sea salt

Instructions
 

  • Preheat your oven to 350°F (175°C) and line an 8.5-inch loaf pan with parchment paper for easy removal.
  • In a large mixing bowl, combine the mashed figs, eggs, applesauce, Greek yogurt, coconut sugar, and vanilla. Whisk until smooth and well-blended.
  • In a separate bowl, whisk together the whole wheat flour, cinnamon, baking soda, and sea salt.
  • Gradually add the dry ingredients to the wet mixture, gently folding until just combined. Avoid overmixing to keep the bread tender.
  • Pour the batter into the prepared loaf pan. Smooth the top and arrange fig slices decoratively on top for presentation.
  • Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Check the loaf at the 20-minute mark and cover with foil if the top is browning too quickly.
  • Once baked, let the loaf cool in the pan for 15 minutes. Then transfer it to a wire rack to cool completely before slicing.

Notes

For a spiced version, add a pinch of nutmeg or ground cloves. Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to 5 days. Slices can also be frozen.
