Ingredients

  • 1 cup whole wheat flour
  • 3/4 cup old fashioned oats
  • 1/2 tsp cinnamon
  • 1 tsp baking powder
  • 1 large egg
  • 1/3 cup brown sugar
  • 1 tsp vanilla extract
  • 1/3 cup vegetable oil
  • 3/4 cup plain Greek yogurt
  • 3 oz light cream cheese
  • 2 tbsp sweetener of choice (maple syrup, honey, very ripe banana, etc.)
  • 1 kiwi, sliced
  • 1/2 banana, sliced
  • 1 peach, sliced
  • 1 pint blueberries
  • 1 pint strawberries, sliced
  • 1 pint raspberries

Instructions

  • Preheat your oven to 350°F and line a round pizza pan with parchment paper.
  • In a large bowl, stir together whole wheat flour, oats, cinnamon, and baking powder.
  • In a separate bowl, whisk the egg, brown sugar, vanilla, and vegetable oil until smooth.
  • Add the wet ingredients to the dry mixture and stir until just combined.
  • Spread the dough onto the prepared pizza pan, shaping it into a circle. If it's smaller than your pan, that's okay—just focus on forming a neat round shape.
  • Bake for 10 minutes or until the crust turns a golden brown. Let it cool completely.
  • While the crust cools, make the topping by combining Greek yogurt, cream cheese, and sweetener in a bowl. Stir until smooth and creamy.
  • Spread the yogurt mixture evenly onto the cooled crust.
  • Top with your favorite fresh fruits, arranging them in colorful patterns for a stunning presentation.
