Ingredients
  

  • 1 Tablespoon olive oil
  • 1 medium yellow onion chopped
  • 2 cloves garlic minced
  • 1 lb lean ground beef 85%/15% or leaner
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon fine sea salt plus more to taste
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1/2 teaspoon chili powder
  • 2 heaping Tablespoons tomato paste
  • 2 cups beef or chicken broth
  • 2 cups whole milk or dairy-free milk
  • 8 oz dry uncooked macaroni noodles or small shells
  • 2 cups shredded mild cheddar cheese
  • 1 bunch fresh parsley for serving

Instructions
 

  • Heat a large, deep skillet or Dutch oven over medium heat, then add the olive oil. Once hot, toss in the onion and garlic. Sauté for 3-4 minutes until fragrant and softened.
  • Add the ground beef to the skillet, seasoning it with salt and pepper. Cook for 7-8 minutes, breaking it apart with a wooden spoon, until browned and fully cooked. Drain any excess fat if necessary.
  • Stir in the paprika, oregano, chili powder, and tomato paste until evenly combined. This step intensifies the flavor.
  • Add the broth and milk. Stir well, then mix in the dry pasta. Bring the mixture to a gentle boil over medium heat.
  • Cook for 8-12 minutes, stirring occasionally, until the pasta is tender and most of the liquid has been absorbed. Adjust seasoning to taste.
  • Turn off the heat and stir in the shredded cheddar cheese. Allow it to sit for 1-2 minutes for the cheese to fully melt, then toss to combine.
