- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 4 boneless, skinless chicken breast halves (6 ounces each)
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 1 tablespoon butter
- 1/2 teaspoon dried thyme
- 1 cup chicken broth
- 3 tablespoons lemon juice (freshly squeezed)
- 2 tablespoons minced fresh thyme
In a small bowl, combine the flour, salt, and pepper. Set aside 4-1/2 teaspoons of the mixture to thicken the sauce later. Sprinkle the remaining flour mixture over both sides of the chicken breasts.
Heat olive oil in a large nonstick skillet over medium heat. Add the chicken and cook for 7–9 minutes on each side or until fully cooked (juices should run clear). Remove the chicken from the pan and keep it warm.
In the same skillet, melt butter over medium-high heat. Add the chopped onion and cook for 3–5 minutes, stirring frequently, until tender and slightly golden.
Stir in the dried thyme and the reserved flour mixture until combined. Gradually add the chicken broth and lemon juice, scraping the browned bits off the bottom of the pan for extra flavor. Bring the mixture to a boil and cook until slightly thickened, about 2 minutes.
Return the cooked chicken to the skillet and spoon the sauce over each piece. Sprinkle with fresh thyme before serving.
